Gallica Wine Cabernet Sauvignon 2010
The 2010 vintage is more about nuance, advantageous sites, and attentive farming than grandeur and scale. Growing conditions were cool yet amply long enough for favorable ripeness, rewarding Gallica Wine with sublime balance and an undercurrent of alluring aromatics sometimes lacking in riper years. The wine whispers and represents the graceful side of cabernet sauvignon.
83% Cabernet Sauvignon, 10% Cabernet Franc, 7% Petit Verdot. Gallica Wine is a small hands-on winemaking effort. The desire to personally handcraft wine from coveted sites, work side-by-side with committed growers who embrace organic and sustainable farming practices, and explore interesting varietals, led Rosemary Cakebread to make wines under the Gallica label beginning in 2007. Winemaking practices are simple: relying on small-lot fermentation and hand punch-downs to gently coax lush tannins.
