This wine is perfumed in brioche and baked apple, with seasonings of nutmeg and vanilla. It opens in a rich, full-bodied concentration of citrus and white peach and evolves on the palate to show structure and depth. Bright acidity lifts hints of toasted oak, maintaining a fresh and plush finish.
Ripe peach, citrus fruits, spice, and pie crust aromas all mingle and lift from the glass. The citrus, supported by notes of apricot, continues on the palate which is concentrated with a rich, creamy middle palate, and strong supporting acidity. The finish is long and marked with hints of vanilla. This wine will continue to build richness as it ages in the bottle.
Thomas S. Moore Chardonnay Cask Finished Bourbon is one of three releases in the new "ultra-premium" brand from Barton 1792 Distillery. Moore founded the distillery in 1889 in Bardstown, Kentucky now known as Barton 1792 but it closed in 1920 due to Prohibition.

This wine exhibits ripe fruity flavors of pear, crisp green apple, vanilla and toasty caramel. A medium-bodied wine, approximately 70% is barrel-fermented to integrate fruit and oak flavors. Partial malolactic fermentation adds a rich texture and buttery component.
Fossil & Fawn started out as a completely reasonable idea in the late summer of 2011, and quickly spiraled into a much more complex, frustrating, terrifying, and unbelievably rewarding venture. They began with the notion of making a small amount of wine from their family vineyard as a single-site bottling, simply because no one else had done so before.
Medium-gold in color. Aromas of key lime, peach, and lemon pith. Medium-full bodied on the palate, with a refreshing acidic grip. Aged in barrel for 12 months before being racked to concrete and stainless steel for an additional 8 months of aging before bottling.
Produced from our own steep hillside vineyards which bring out a uniquely textured wine. Planted with the very small berry clone "Old Wente," which is known for balance and aromatic complexity. The growing conditions of 2020 produced a rich yet firm wine. The percentage of new French oak barrels is held to a maximum of 30% to keep vineyard character in the forefront.
