Hand harvested, 90% whole cluster, natural yeast fermentation in amphorae and small fermentation bins. 6 months in neutral 500L French oak barrels and stainless steel tanks. Bottled unfined and unfiltered.
Expertly crafted as the perfect accompaniment to a fine cigar. Matured in ex-bourbon casks then 10 yr old Matusalem sherry butts and finally finished in Cabernet Sauvignon wine barriques. Cinnamon, vanilla, and red fruit aromas with toffee notes. Orange zest finish.

The 2015 Firebelle is their Merlot-dominated cuvée. Coming from the sandy soils called Bale Loam it’s a blend of 71% Merlot 21% Cabernet Sauvignon and 8% Petit Verdot. This is a more tightly knit wine with loads of lack fruits mocha and coffee bean some licorice and tar.
