A precious Willett from the summer of 2022.
The Willett Distilling Company or Kentucky Bourbon Distillers, as it is also known, is a small, family-owned company that produces labels such as Willett Pot Still Reserve, Willett Family Estate, Johnny Drum, Old Bardstown, Noah’s Mill, Rowan’s Creek, Pure Kentucky and Kentucky Vintage. They’re located in Bardstown, Kentucky. As a relatively large independent bottling company, they’re called the big daddy of Bourbon and Rye Bottling. It’s just one of those distilleries that once you discover it, you’re instantly in love.
Soft, smooth tastes of butterscotch, a devilish and deliciously sweet silkiness born of new charred oak and Pedro Ximenez sherry casks. Punctured with hints of clove and tiny stings of black pepper.
Composed of 70% Merlot and 30% Cabernet Franc coming mainly from clay soils on the plateau and aged for one year in oak, 65% new, the 2015 Clos du Clocher springs forth with profound notes of crushed blackberries, black cherries and blueberry compote plus touches of iron ore, bouquet garni, beef drippings and black soil.
Naturally ferments because of the high barley content. Notes of brown sugar and magnolia blossom. Tastes of black pepper, cinnamon stick, dried dill, and baked apple. Ends with a dry finish.
Taragawa is the largest producer on Miyakojima island. Taragawa has a team of just five producing about 1000 Kiloliters per year. Surrounded by sugarcane fields, the distillery was established in 1948. Taragawa uses the hinekoji method which allows a special black mold to propagate for 3 days, creating a strong flavor and aroma suited for long aging.

This Carmenere is sourced from two section of Invina Batuco vineyard in the Maule Valley of Chile. The Carmenere grape with black fruit, herbal notes and soft tannins is blended with Cabernet Sauvignon to add a spicy red fruit characteristic, and Syrah to include notes of red licorice.
This 2018 Gravel Road Pinot Noir has a surprising expression of red fruit, especially given the blacker fruits usually associated with a warm growing season like 2018. Pronounced aromas of rhubarb/strawberry, juicy red plum, and black raspberry fruit is layered with allspice with a bit of cinnamon stick spice.
