Don Armando Reserve is a 100% agave Tequila with double distillation and aged in fine white oak barrels for a period of 5 years. It goes through a special process that allows it to preserve its woody characteristics that result in a tequila of excellent aroma and flavor with distinguished pure crystalline color. Taking its name from its location in Shiraiwa, this region is renowned for its pristine snowmelt water. This assemblage-style junmai daiginjo is made by former Chef de Cave at Dom Pérignon Richard Geoffroy. A blend of no less than 20 different sakes, including reserves from previous years, this rich and complex sake will age gracefully over the next decade. Pair with raw scallops in yuzu vinaigrette.
Grape Variety: 100% Melon de Bourgogne – 10-30 years old.

On the nose, the wine leaps from the glass with ripe blackberry, cassis, black cherry, and red plum, with a lovely herbaceous undertone. The palate expresses juicy red and black fruits with hints of black tea, damp earth, vanilla bean, lavender, and just a touch of flint.

A very fresh and decidedly peppery nose features pretty notes of red berries and an elegant floral nuance. There is fine intensity and volume to the well-detailed middle weight flavors that deliver very good length on the saline-inflected finish. Good stuff that could be enjoyed young or aged for a few years to good effect.
This north-facing limestone site is cool and late ripening. In a warm year like 2019 its quality soars. There is such a fine acidity and outstanding length. I was really blown away by this, and can’t wait to see how the fruit and acidity entwine further with some bottle age. Nervous and tense, this warrants attention.
