This is an exceptional 9year old Tennessee Straight Bourbon Whiskey, polished in decadent Phifer Pavitt Reserve Cabernet Sauvignon barrels from Napa Valley. It has voluptuous, succulent, and bold notes of plums, milk chocolate and blackberries. Bardstown.
Even at this early stage, this wine is long on flavor and texture, showing all the red raspberry and blackberry fruit that were apparent at harvest. Also coming forward are layers of dark chocolate, graphite, incense, and a wide array of baking spices.
The more limited cuvee, the 2007 Gigondas Terrasses des Dentelles, exhibits super precision, a terrific minerality that comes through the lavish amounts of black raspberry, blueberry, and spring flower characteristics, superb ripeness, a saturated ruby/purple color, full-bodied power, and admirable elegance, purity, and acidity.
Notes of leather, toasted oak and vanilla carry into the palate, along with flavors of stone fruit and port that give way to creamy crème brulee and honey with nutty marzipan. The finish features slight tannins and notes of black tea, apricot and smoke.
Big, tarry espresso notes wrap deep, resonant flavors of blackberry in satin. Dry, chalky tannins abound on the mid-palate with a hint of mint and shale. It's an expressive, ageworthy, big-boy red that offers a defined structure.
