Crafted in 6 ton fermentors, the cap management was primarily pump and pour overs combined with a few rack and returns. Spontaneously fermented by indigenous yeast, each fermentor reached temperatures between 87-90 degrees F. About 25% whole cluster and 20% extended maceration, the wine yields approachable and classic Willamette characteristics with structured, smooth tannins.
Grenache (Garnacha) "Gambrels of the Sky" comes from an Emily Dickinson poem entitled “I dwell in Possibility,” and though this feels a little lofty, it seemed appropriate for a wine dedicated to my remarkable grandmother, Frances Howard Peterson. Not only did she love poetry, she also loved cooking, science, and wine.

Here, sandy/gravel soils, year-round sunshine and 60°F/15°C day-to-night temperature shifts combine for exceptional conditions in which to grow healthy, high-quality organic grapes. The wine is dark garnet color with purple highlights. The wine aroma is dominated by shades of black currant, highlighted by notes of cherry and blackberry. The wine has a balanced taste, it can be traced combination of fruit and black berries. The finish is long and dry. Wine is served with meat, grilled, sliced cheese, it also served as an aperitif.

Herzog Variations Oak is a special wine series that journeys beyond the variations of California wine country, and into the Battle of the Barrels. We start with North Coast Cabernet Sauvignon separated into two different types of oak barrels and see which one will come out on top. Oak barrels are a winemaker's spice rack, allowing them to vary the color, flavor, profile and texture of the wine.
There's better integration of the oak and better balance, harmony and elegance in the 2021 Privada Family Blend. It was produced with 40% Malbec and 30% each Cabernet Sauvignon and Merlot from vineyards in Luján de Cuyo. It feels very integrated, with each variety adding aromas and flavors and coming through as complex and powerful. This has to be one of the finest vintages for this bottling. Maybe they used less new barrels... 220,000 bottles produced.
