This is the second addition to the 'Spot' range of Irish whiskeys, which contains the famous Green Spot Pot Still Whiskey. The Yellow Spot is a single pot still Irish whiskey which has been matured in three types of cask: American bourbon cask, Spanish Sherry butts and Spanish Malaga casks for a sweeter flavour.
“Dair Ghaelach” means quite simply, Irish Oak.While the name may be simple, the story of this whiskey is unique. This whiskey has been finished in casks made from virgin Irish oak grown in Kylebeg Wood on the Ballykilcavan Estate, near Stradbally in Co. Laois.
The second of seven bottlings in the Midleton Kylebeg Wood series, each of which is traceable to a single native Irish oak. The felling of these trees on Ballykilcavan estate, cast sunlight on the floor of this centuries-old forest where new saplings are already taking purchase. A promise that Irish oak will continue to grow there for centuries to come.
Bottle number four of seven in the Midleton Kylebeg Wood series. This rich and subtly chocolatey pot still whiskey was finished in casks cut from a single native Irish oak – sourced from a managed forest in Country Laois. After felling, this venerable tree was shipped to Spain where it was cut and left to dry in the warm climate of Jerez. After fifteen months, the staves were coopered into hogsheads and sent back to Ireland to be filled with this unique spirit.
Each step of our small batch process involves more human interaction, from hand selecting casks of grain and malt whiskey, blending each batch to taste, and finishing in only the highest quality Central American rum casks, imparting a distinct full-flavored character.
