A wine that is pleasantly fruity with an attack that reveals wonderful freshness. This Gevrey-Chambertin Villages can definitely be cellared for 5 to 6 years.
After sorting in the vineyard and winery, the grapes are de-stemmed then directly put in tank. The spontaneous fermentation then starts. The grapes will stay in tank for roughly three weeks during fermentation. The wine is then put in oak barrels, by gravity, for 10 months (no new oak). No fining is performed.
Garnet red. On the nose there are scents of cherries, wild strawberries, caramel. Fresh and well balanced, good length on the palate. The grapes are handpicked, sorted and transported to the winery in small containers to avoid crushing berries and premature oxidation. They are completely de-stemmed and put into vats open stainless steel, the temperatures being controlled by thermoregulation.
Ripe fruit and fine toasted notes mark the nose. The mouth has best features: power and roundness before a late slight vanilla mouth. This wine goes perfectly Seafood, foie gras, poultry to mushroom, grilled fish or creamy cheeses.
A vibrant, expressive rosé that combines zestful aromas with an intense freshness allowing the fruit to fully embody the wine. The grapes are harvested by hand. De-stemming and crushing are followed by cooling and inert gas injection. Free-run juices are selected. Alcoholic fermentation at 14°C.
From the commune of Savigny-en-Véron, the 2018 Chinon Les Barnabés is sourced from the alluvial soils of the Loire and the gravels from the Vienne. The wine opens pure, clear and fresh, but it's also deep and concentrated, with spicy notes of ripe cherries, black berries, raspberries and violets.
