The 2021 The Flight is composed of 65% Merlot, 19% Cabernet Sauvignon, and 16% Cabernet Franc. Deep garnet-purple in color, it waltzes out with flamboyant notes of juicy black raspberries, ripe plums, and boysenberry preserves followed by hints of cinnamon toast, rosebud tea, garrigue, and iron ore.
Brilliant yet pale gold in color, the 2021 Hawk Hill Vineyard Chardonnay beams with energy and verve. Vibrant citrus aromas are balanced by an undertone of light clover honey and crushed wet stone.
The Papillon pours into the glass with a deep crimson hue, accented by vibrant purple highlights and a ruby edge. The wine’s viscosity is evident, with slow-moving tears, and its aroma reveals layers of ripe boysenberry, floral violets, chocolate-covered blueberries, hints of citrus zest, mineral graphite, and warm brioche.
“The Brooklynites 3.0,” our third orange wine, is made from Gewurztraminer grapes grown in Los Carneros, Napa Valley. The orange hue of this wine comes from the skin contact and maceration during fermentation; the same process that gives red wine its color, tannins and also contributes to its flavor.
This is a big, bold Cabernet Sauvignon that explodes with black cherry, wild berry fruit and notes of chocolate and vanilla. The nose is slightly smoky. The body of the wine is rich in texture with bright, fresh finish.

The 2013 Cariad Proprietary Red Wine, a blend of 50% Cabernet Sauvignon, 28% Merlot, 13% Cabernet Franc and 9% Petit Verdot, shows great intensity, with a slightly more burning ember and scorched earthiness to it, giving it a more Graves-like character compared to the purity of the Tychson Hill.
