Each year, our goal for Southing is to create the ideal marriage of complexity and elegance. Southing exhibits aromas of fresh strawberry, rose water, Rainier cherry and subtle baking spices. The fine tannins and minerality are enhanced by our estate vineyard’s characteristic cool climate acidity.
A blend of 76% Cabernet Sauvignon, 23% Cabernet Franc and 2% Petit Verdot, the deep garnet-purple colored 2016 MMXVI Cabernet Sauvignon gives up gregarious notions of warm red and black currants, black raspberries and warm plums with hints of chocolate mint, pencil shavings and tilled loam plus a waft of lilacs.
Explosive nose of vanilla crème brûlée and stovetop-reduced dark cherry, red currant, and blueberry compote. Very subtle hints of cocoa, anise, buttered toast, and kalamata olive. I’m absolutely enamored with the nose on this wine. On the palate the cocoa becomes more pronounced and thicker with ripe but fresh fruit. The generous mid-palate is full and plush with soft, integrated, tannins and a lovely lingering finish.
75% Merlot, 15% Cabernet Franc, 10% Cabernet Sauvignon. Illustration reprents the core of the blackbird. Every element of its multi-faceted wine portfolio draws inspiration from this principally merlot composition.
Plenty of ripe, wild berry and plum aromas and flavors, framed by vanilla, spice, and toasty oak. Lush mid-palate tannins flow into a lengthy finish accented by bright fruit. Made with 89% Cabernet Sauvignon, 4% Cabernet Franc, 7% Petit Verdot.
Straw color. Fruity aromas of juicy tangerine, passion fruit, orange blossom water, and lime sherbet with a velvety, crisp, fruity medium body and a sleek, interesting, medium-length lime zest, cream, and pineapple gummies finish.
Pale silver straw in color with a slight green tint, our Sauvignon Blanc has lively lime zest aromas and flavors of white grapefruit, gooseberry, delicate florals, and lemongrass. A slight hint of minerality and juicy citrus flavors lead to a crisp, lingering finish.
