The roots of Pajaru estate are deeply embedded in the history and symbols of Puglia. The shepherd, known as the “Picuraru” in dialect, embodies that seasonal toil typical of the slow work required to produce a great wine. The generic Santenay is made from old vines – 50 years of average age – is a good start. It’s quite forward – 70% whole cluster – with a lovely organic fruit spiced with cinnamon and allspice.
