Made from Listán Negro sourced from the vineyards of Pedro Umpiérrez and Ascensión Robayna. Vines in excess of 100 years old. Planted in deep, black volcanic sands (up to 3m deep) over clay subsoils. Hand harvested, 90% whole cluster, natural yeast fermentation in amphorae and small fermentation bins. 6 months in neutral 500L French oak barrels and stainless steel tanks. Bottled unfined and unfiltered.
Chaucer's Mead uses 100% pure honey from hives throughout Northern California and is composed of a blend of three types; orange, alfalfa and sage. Each of these components brings a unique quality to the blend and contributes to the overall complexity of the wine.
Each of the select vineyards has contributed its dramatic character that led to the creation of a complete, deep, and harmonic wine. Following 18 months maturation in oak barrels, the final blend is dark and concentrated with raspberry, blueberry, and plum fragrance, as well as roasted oak, coffee, and soil.

In 1986, a small block of Abbey Ridge vineyard was specially planted with the Martin Ray Massale of Pino Noir. Now, 30 years later, we harvested and fermented these vines separately to produce 2 berrels of an exceptional wine.
