The generic Santenay is made from old vines – 50 years of average age – is a good start. It’s quite forward – 70% whole cluster – with a lovely organic fruit spiced with cinnamon and allspice. On the palate rich and velvet with a lavish feel for a wine at this level.
Very delicate destemming and crushing to preserve the integrity of the grapes followed by a first fermentation in october for 8-10 days at controlled temperature (21-22°C). A second "Ripasso" refermentation (on the skins of Amarone in February/March. Ageing in barrels of 25 HL (70%) and in barriques (30%) or one year. Dry, warm, full bodied and intense wine.

While this wine suffuses your mouth with flavors and textures, it’s nonetheless remarkably nimble; there’s nothing weighty about this silky, outrageously good dessert wine – it’s a knockout!
