For the production process, the grapes are de-stemmed and then left for maceration. It is then put in a stainless steel container for fermentation at a controlled temperature, in which the whole process is very carefully checked and then matured in oak barrels. Marsannay is the village which marks the northern gateway to the Côte d'Or on leaving Dijon, the capital of Burgundy and home to the Ducs de Bourgogne. This village marks the beginning of the Route des Grands Crus which follows the N6 highway through the Côte d'Or. Marsannay received its Appellation Contrôlée in 1987 in recognition of its consistently high quality wines.

The 2016 Clos de Vougeot Grand Cru was reduced by one-third due to the frost, unorthodox in that it affected the higher part of Etienne's vines. It has a slightly more rustic, almost obdurate nose than the previous two vintages, with touches of dried blood and something almost ferrous sutured into the red berry fruit.
This is a bespoke rosé in that the Pinot Noir grapes were grown specifically with the intention of making a rosé wine. Pale pink with a copper hue, this wine has a classic "eye of the partridge" color. Citrus-driven aromas carry through to the palate. On entry, bright acidity and flavors of pink grapefruit and lemon zest enliven the orange creamsicle notes, while hints of dried apricot and sweet spice add complexity. The brightness verges on minerality, but there is so much weight that the richness balances out the firm acidity and carries the flavors of dried fruit through the long-lasting finish.
