Fermented with native yeasts and matured in neutral French oak.
The roots of Pajaru estate are deeply embedded in the history and symbols of Puglia. The shepherd, known as the “Picuraru” in dialect, embodies that seasonal toil typical of the slow work required to produce a great wine. The Paritaru is still a symbol of wisdom and experience, the same qualities necessary for creating a great wine.
