Dignitary Cabernet Sauvignon is crafted from grapes grown at the base of Chalk Hill, where a slightly warmer climate and rich volcanic soils create ideal conditions for the clone. On the palate, luscious aromas of dark fruit leading to elegant layers of blackberry, black cherry and hints of spice and warm saddle leather on the nose, with a lasting and well balanced finish.
With its intense flavors and layered complexity, combined with softness and restraint, this wine is capable of gracefully maturing in a bottle, befitting of wines produced in the Superieur Series.
Very unique Herzog creation as the winery took some of their best Cabernet Sauvignon grapes and aged them exclusively on French oak that imparts flavors of vanilla and chocolate and even some clove and spice. This wine is intended to highlight the characteristics of French oak versus the American oak bottle Herzog also created.
