This 100% Chenin Blanc is harvested from selected old bushvine vineyards on the top slopes of Bottelary Hills. The fruit is destemmed and pressed, settled for 24 hours and fermented in stainless steel and concrete tanks, left on the fine lees for 6-8 months.
