This wine was largely (75%) barrel fermented, and 50% of the wine underwent malolactic fermentation. A full 80% of the Chardonnay was oak aged for 10 months, with the remainder kept in temperature controlled stainless steel tanks to enhance the fruit and acidity.
Like the renegade Bordeaux winemakers known as "Garagisters," Taft Street began in a garage rather than a grand chateaux, stressing quality without pretense. Their handcrafted wines are perfect for any occasion; best enjoyed when surrounded by friends and family. Since 1979, they have carried on the garagistes tradition of innovation and excellence in a chateau-alternative locale. From a backyard Berkeley garage to an old-apple processing plant in Sebastopol, California, the family at Taft Street continues in the garagistes traditions to this day, crafting limited-production, crowd-pleasing wines from select Sonoma County vineyards.
