Shannon Ridge High Elevation Cabernet Sauvignon 2012
The Shannon Ridge 2012 High Elevation Cabernet Sauvignon is deep garnet in color. It has aromas of black cherry, blackberry pie, mocha spice, tobacco notes, and sweet oak. The flavors include ripe dark fruits, dark chocolate, black pepper, and hints of vanilla and spice. It's a smooth wine with good structure, rich tannins, and a long and lingering finish.
Shannon Ridge is a family-owned vineyard and winery located on the steep mountain slopes of Lake County, California. They are dedicated to sustainable farming practices, thus producing the finest mountain fruit possible. The distinctive terroir of each of their hillside vineyards or high-elevation ranches gives the winemaker a full-flavor palette from which he creates these robust, food-friendly "High Elevation Collection" wines. The grapes used to produce this Cabernet Sauvignon were harvested from their family's vineyards in Lake County, California. Sugar at harvest was 26 degrees brix, the grapes were put through an early press with a slow extraction of color and tannins from the skins as well as 100% malolactic fermentation in French oak.
