Blend of Assyrtiko, Athiri, and Aidani. Santo Wines, founded in 1947, is the cooperative on the island of Santorini. It is a vital aspect of continuing Santorini's winemaking tradition as it supports many of the island's farmers who depend on Santo Wines' yearly production. The winery was built on 5 different levels in order to blend in with Santorini's breathtaking landscape, so it was constructed in an eco-friendly manner. This 5-tiered structure allows the juice extracted from the pressing process to be transferred into tanks through gravity and the minimal use of pumps, which promotes a higher quality winemaking process. By tradition, Santorini vintners harvest in the afternoon and vinify "Nykteri" during the night. "Nykteri" is the word for "staying up all night" in the local language. The blend of Assyrtico, Athiri, and Aidani, and the 3-month maturation in barrels give us mineral character with pure aromas of fruits and spices.
