Since we created Rosalcy, we have used the time to make a supple wine with approachable tannins. Using a part of Tournefeuille's vines to produce a well balanced wine, really easy to drink.
Age of vines : 10 to 20 years. Respecting environment and control treatments. Thinning leaves and green harvesting in July/August.(no eggs/nodairy) Grapes are sorted and destimmed. Hot maceration after fermentation.2 or 3 weeks vatingtime. Malolactic fermentation in vats.
