Pale straw yellow with splendid greenish reflections. Intense, delicate, and persistent aromas with hints of linden blossoms and the crust of freshly baked bread. Ample, fruity, and fragrant flavors. Pair with hot and cold hors d'oeuvres; excellent with every sort of fish and shellfish.
100% Cortese. Gavi is produced in the southeast corner of Piedmont on elevated hillsides characterized by a particular microclimate that is influenced by the nearby Mediterranean sea to the south and the Apennine mountains to the west.The vineyards lie over calcareous-marly soil (thus the name Marne), ideally suited to the production of a high-quality Gavi wine.To preserve the greatest degree of typicality in the wine, fermentation is induced by the use of indigenous yeasts that come from the Cortese grapes themselves and before being pressed, a part of the grapes undergoes cold maceration or cryo-maceration so as to preserve the characteristic aromas.
