Margerum Sybarite 2012
Lifted perfume of apple blossom, Tahitian lime, and ripe banana, layered with a slight hint of gunflint. As the wine hits the surfaces of the mouth a fresh and vibrant zingy acidity floods the taste buds sending signals to the brain asking for more! Flavors of green apple, snow-pea tendril, bosc pear, and wet slate come to the fore. Complimented with subtle texture (lees contact) this wine has incredible persistence and balance. This wine is perfect to serve as an aperitif or after dinner with a selection of your favorite regional cheeses.
Sybarite (pronounced as "sib-bar-right") is derived from Sybaris, an ancient Greek city in Southeastern Italy noted for the luxurious, pleasure-seeking behavior of many of its inhabitants. Sybarite is Margerum's definitive Sauvignon Blanc. An amalgation of all of the top Sauvignon Blanc vineyards they work with. It is creafted from Sauvignon Blanc grown at McGinley Vineyard (50%), Curtis Vineyard (15%), Grasini Vineyard (20%), and Star Lane Vineyard (15%). By blending these diverse vineyards, they get bold expressions of Sauvignon Blanc's range of flavors. The result is a wine with remarkable complexity, texture, persistence, and luxury.
