100% Cabernet Sauvignon, the chief grape of the Medoc region of Bordeaux. This late-ripening variety with small, dark berries results in complex wines of intensity and structure. The warm climate of the Languedoc produces an excellent balance between restrained acidity and ripe fruit flavors.
Following harvest grapes are de-stemmed prior to a 24-hour maceration to facilitate color extraction. Fermentation is conducted under controlled temperatures 4-6 days to enhance natural fruit flavors and a firm edge of tannin. The wine is then matured for several months in stainless steel vats prior to bottling and release.
