Jaqk Cellars High Roller Cabernet Sauvignon 2011

Aromas of black cherry, dark chocolate, toasty oak, cassis, caramel, and rose water.The entry is full and round and leads into a chewy tannin structure backed by ripe fruit flavors. The finish is lengthened by viscosity and medium grain tannins that coat the palate. Distinctively rich and elegant, this wine pairs beautifully with the simplicity of filet mignon, cheeses (Danish blue, grafton village cheddar, pecorino), or with more intensely flavored dishes, such as porcini rubbed bone-in rib eye, bordelaise sauce, steak frites, grilled tomatoes with oregano, potatoes gratin dauphinoise, and by itself to the very end of the night!

High Roller is Jaqk's flagship wine. This delicately crafted Cabernet Sauvignon is made from 100% Napa Valley grapes, harvested by hand to allow Jaqk's winemaker maximum control during the crushing and fermentation processes. The wine is aged in small French oak barrels for 2 years, then fined with egg whites for finesse and elegance in the tradition of Bordeaux-style Cabernets. They chose the king of vessels, the mighty Imperiale, and had one custom made for them in Milan, Italy.
