Glen Eldon Wines philosophy is to produce rich, varietal regional wines. Our Cabernet Sauvignon exemplifies this. With such intense fruit in 2009 fermentation on skins was restricted to five days before being pressed off and the pressing being returned to the freerun. Maturation took place in a blend of French and American Oak hogsheads which has added further structure and complexity to the wine. Although the wine is drinking superbly now it will benefit from further maturation over the next 6–8years.
