This single-vineyard Baga from the southern extremes of the Bairrada DOC is fermented in oak lagares before being transferred to used French barrels. A standard bearer for the region, this wine has a Foillard-like texture and represents tremendous value. The vast majority of the production is sold to Michelin-star addresses in London.
The vine to bottle philosophy is to create a wine that respects the expression of no makeup berry, without artifice, keeping winemaking ancestral techniques with minimal intervention. This red comes from old vines in various areas mentioned in the map. The viticulture and manual labor traditional techniques respecting the region, while maintaining the natural vegetation without using herbicide. A small percentage of whole grapes (about 10%), vinification is made berry oak mill inspired by Roman times . Rests for 18 months in barrels of 500 liters of French oak fine grain, 80% and 20% used again.
