This sauvignon blanc comes from vines situated in the commune of Bue. These vieilles vignes, whose origins go back to the year 1950, were first cultivated by Morin's dear old neighbor, Ovide, from whom the parcel was acquired. The terrior, "Les Cailottes," generously expresses itself thanks to its deep roots, manual harvesting, and several months aging on the lees.

Morin harkens back to the past, with the certainty that great wine can only be made from low yields and grapes that are harvested by hand. In every vintage (with his severe pruning and selection at harvest); on average, Morin has a meager 4,000 L/2.5 acres. By setting aside his oldest vines from various parcels, including Chene Marchand, Morin is able to offer the richest, most-intense wine. A light sediment might appear in the bottle, the natural result of the wine being bottled unfiltered.
