The Paquet family has been winemakers and barrel makers in the village of Fuisse for four generations. Jean Paul has been at the helm since 1978 and his son Yannick came on board in 2005 after finishing his viticultural studies. The Paquets own a total of 8 hectares of vines in small parcels facing East and Southeast spread across the hills above the village at an altitude of 250m.
Only Chardonnay is planted and the majority of the vines are over 50 years old. The domaine produces wine under the appellations of Pouilly Fuisse, Pouilly Vinzelles, Macon Fuisse, Macon Chaintre and St. Veran. All the wines are produced with the terroir and environment in mind. Although Jean Paul has not sought certification he uses many techniques of organic farming. No yeasts are added and minimal treatments are performed in the vineyard.
