Chateau Douley is a juicy little Premieres Cotes de Bordeaux with a blend of Merlot, Cabernet Franc and Cabernet Sauvignon. The wine goes through 15 days of maceration with frequent pumping over, to extract the best character and color. Fermentation is by grape variety and plot origin and takes place in temperature controlled tanks.
Quite the process for the fare, then 2/3 of the wine matures in one-year oak barrels; the remaining is drawn from small stainless steel tanks. The result is an expansive, sweet, mineral-laced black cherry and cassis fruit wine with a fragrant, medium to full-bodied personality, and outstanding ripeness, delineation, and purity.
