The native Mataossu (pronounced mah-tah-OHSS-soo) dominated the vineyards of Varigotti in the 19th century, but its delicate vegetative balance provoked most winegrowers to rip out the vines in favor of less finicky grapes.

Selección is only produced in great vintages and in varying quantities depending on the conditions of each vintage. The wine is a result of a strict selection of the family's oldest vineyards planted on hillsides and higher altitude sites that tend to have poorer soil and better drainage.
2022 is an outstanding Burgundy vintage: a warm and dry year that has produced wines with very high levels of ripeness and power, but which remain beautifully balanced and fresh-tasting too. The quality of the grapes was as good as many growers had ever seen.

The estate’s 24 acres produce some of the best Pinot Noirs in the Germany and are savagely underpriced.
2017 was a very challenging year, as most of their vineyards in San Vicente de la Sonsierra in Rioja were affected by frost, unlike others in nearby Laguardia. Not only was it frost, but they also had hail later on in the season.
