This wine has a unique profile due to the seasoned rum barrels used in the aging process. The portion aged in rum barrels imparts aromas of baking spice, nutmeg and toasted marshmallow. The balance of the wine, aged on French and American oak, offers red fruits and boysenberry jam with notes of vanilla. The structure is savory with velvety tannins and a lingering finish.
A deep maroon core with a ruby rim, the 2021 Eight Years in the Desert opens with aromas of wild blackberry, pepper, oatmeal raisin cookie, Sequoia forest floor, bay leaf and spices. Siete Misterios Espadin was the first mezcal expression that Siete Misterios released. While on a trip into the Sierra, they visited the small community of Sola de Vega. The mezcal they tasted there was all hand milled and clay pot distilled, which they noted as giving the mezcal sweeter and spicier features compared to mezcal made in other regions.

Revisited in bottle, the 2021 Santenay Rouge Gravité has fulfilled all the potential it displayed from barrel. Mingling aromas of blackberries and cassis with hints of menthol, orange oil and exotic spices, it's medium to full-bodied, deep and velvety, with a fleshy, strikingly concentrated core of fruit that's framed by supple tannins, concluding with a long, saline finish.
