Antiyal Carmenere 2011
100% certified organic Carmenere. Antiyal, founded in 1996, is a small family winery owned by Alvaro Espinoza and family. Often referred to as the original 'Garage Winery' in Chile, today Antiyal has grown into a modest but personably sized winery that maintains a strict focus on quality. All of their wines are organically and biodynamically grown. Organic farming lends the wines more genuine flavors with a stronger sense of place—a result of the respect they have for nature.
Antiyal Carmenere comes from a single vineyard in El Escorial, in the Maipo Valley. Winter 2010 was dry with a 30% lower rainfall and cooler temperatures than the previous growing season. 2010-2011 was an even cooler year. As a result, bud break, blooming, and the harvesting of grapes were late. The grapes were selected before fed into gravity tanks. Vinification started with a cold soak for 5 days at 10C while fermentation was conducted at 26C after 28 days of maceration. The wine was then racked into cement, egg-shaped tanks for maloactic fermentation and aging for one year. The wine was was not treated with fining agents and filtered to 5 microns before being bottled in December 2012.
